A Chef’s Juice: Pineapple Gazpacho

  • 2 medium tomatoes
  • ½  cucumber
  • 1 spring onion/scallion, optional
  • 1/8 red bell pepper (capsicum)
  • ¼  pineapple
  • ½ lime


  1. Wash your ingredients
  2. Peel the lime but leave the pith (the white) and peel the pineapple. (This is one of those juices that you can spice up if you like.  Add a little spicy salsa of your choice. The bell pepper  does come through, so cut back or eliminate if you do not like that flavor.
  3. Juice all ingredients through your juicer.
  4. Serve and enjoy!
