Banana Almond Butter ‘Sushi Roll’

I’m always looking for quick, healthy and fun after school snacks that are great for kids and adults alike.  Banana “sushi” is a fun idea I’ve been stalking on Pintrest and decided to give it a fresh twist.  My five year old gobbles these up as soon as they’re ready! Bananas are actually pretty healthy.  They’re loaded with potassium, fiber, including resistant starch which can feed the “good bacteria” in your gut.  Read more on why bananas are so good.  Combining protein with carbohydrates is a perfect way to extend the energy releasing potential from these foods and slow the rate of sugar absorption.   Almond butter, chia seeds and sunflower seeds all contain protein!

This fast and fabulous snack can help boost brainpower during that mid-afternoon sluggish time at the office or post-school energy crash and even curb pre-dinner appetite when we tend to graze.  Enjoy a variety of options to top your banana sushi, like goji berries, crushed pistachios, hemp seeds and more!

  • 1 banana
  • 1.5 tbsp almond butter
  • 1 tsp chia seeds
  • 1 tsp dark chocolate chips
  • 1 tsp sunflower seeds


  1. Peel banana.
  2. Slice banana into thick pieces.
  3. Smear almond butter across top of banana slices.
  4. Sprinkle chia seeds and sunflower seeds and chocolate chips on top.
  5. Serve with unsweetened almond milk or other favorite beverage.
  6. Eat with chopsticks, or your fingers!



  • Chia seeds – hemp seeds
  • Sunflower seeds – chopped pistachio, almond, walnut or other nuts/seeds
  • Almond butter – peanut butter, cashew butter
