Cooling Carrot Cucumber Juice

Purple carrots, a staple in this juice, are a total new favorite of mine.  And their best-kept secret? They’re yellow on the inside! Purple carrots contain an additional nutrient over regular carrots, which is anthocyanin that contains powerful anti-inflammatory properties. This juice is cool and refreshing thanks to the cucumber, so enjoy it on a warm spring or summer day. You can even have it as a great pre-workout snack or drink as the carrots are a source of the hydrating electrolyte, potassium, that is also super heart healthy.

  • 4 – 5 purple carrots (can be substituted for any color carrots)
  • 1 pear
  • 4 kale (Tuscan cabbage) leaves
  • ½ lemon
  • 1 cucumber


  1. Wash all produce well.
  2. Peel the lemon and core the pear.
  3. Add ingredients through juicer and enjoy!
