The summer season always has me craving pineapple. There’s just something about its refreshing nature that brings me right to the beaches of Hawaii (oh how I wish I was in Hawaii right now). It also helps make even the most bitter greens taste sweet. I’m normally a big fan of the more decadent smoothies, like my Chocolate Covered Goji Smoothie and the Coconut Almond Milk, but when pineapple is involved, it’s easy to get more green in my life
This tasty smoothie is loaded with potent antioxidants found in the cacao nibs, heart-healthy electrolyte potassium from the banana, bone-healthy calcium from the almond milk (but only if it’s calcium-fortified) and contains digestive properties from the mint leaves. The passionfruit were looking gorgeous at the local farmers market in Byron Bay where I have just been on holiday so I grabbed a big bag of them! You could smell them as you walked past the stall. Passionfruit can be frozen into ice cube trays when you have an abundance of them for later use. Enjoy!
